Shake Your Blues Away

As fun as it may sound, it’s not that easy. In this case, we’re not talking about literally “shaking” your blues away (even though that can sometimes help), but how to get rid of those sad feelings. We’re asking for your help too!

Hungry For More: Basic Brined Chicken

Basic Brine

2 ½ Cups Water
2 Tablespoons Kosher Salt
10 Peppercorns
2 Bay Leaf
½ Lemon

Heat water and salt until salt dissolves. Squeeze in lemon juice, and lemon rind, peppercorns, bay leaf and any other herb or spices you wish to incorporate. Take off the heat and let cool completely. Pour over chicken, turkey or pork and keep in a resealable bag in the refrigerator up to 8 hours. Make enough so all of the meat is covered, double or triple if necessary.

Note: To speed up the process, heat only half the water needed and after you remove the pan from the heat add the remaining liquid amount as ice to help cool.

Brined Chicken Breast

1 lb. Chicken Breast
1 Tablespoon Olive Oil
Pepper

Heat over to 400. If you used a brine, remove chicken from the liquid, rinse with cold water and pat dry with a paper towel. Season with pepper (and salt if you didn’t brine). Heat saute pan over medium high heat, add olive oil and carefully place chicken breast in the pan. Make sure there is enough room so the chicken isn’t crowded. Brown chicken breast on both sides and finish in the oven (about 10 minutes or until internal temperature reaches 165F)

Roasted Asparagus

Asparagus
Olive Oil
Salt and Pepper

Heat oven to 400. Wash and and dry break off woody stems of asparagus. Place asparagus in a single layer on baking sheet, drizzle with olive oil, sprinkle with salt and pepper and roast for 25 minutes. Asparagus should be tender but crisp.

Maxwell’s Salmon

Join Hungry For More’s Jim Manney and Nicole Philips as they learn how to make White Wine Poached Salmon with Purple Thai Rice with Maxwell’s executive chef Mike Wald.


WHITE WINE POACHED SALMON WITH PURPLE THAI RICE

Purple Thai Rice

1 Cup White Rice
1 Cup Black Thai Rice
3 ½ Cups Cold Water Water

Combine rice and water in medium saucepan, turn heat to medium and cover. When rice begins to steam, turn heat down to low and let simmer. Cook rice as directed on package. While rice cooks, start on the salmon.

White Wine Poached Salmon

1 or 2 Salmon Fillets or Steaks
White Wine
Canned Artichoke Hearts
1 Tablespoon Capers
½ Cup Cream
3 Tablespoons Butter
Parsley

Fill a saute pan with white wine until it goes about ¼ to ½ up the sides, add some artichoke hearts and capers. Add salmon fillets skin side up, turn heat to medium and cover pan. Let wine reduce by half and salmon should be cooked to about medium. Remove salmon fillets and keep warm. To build sauce, turn heat to high, add about ½ cup of cream to what remains of the wine and bring to a simmer, add some parsley for color and slowly add 3 pats of butter and let sauce simmer until it thickens slightly.

To serve, place salmon on top of rice and spoon sauce over.

Though it may seem impossible, the best thing you can do is stay positive and believe in yourself and we know a woman who does that and much more!
