Just about everyone has that dish at Thanksgiving that doesn’t really float their boat or rather gobble their turkey. For me, it’s sweet potatoes. Every time they get passed, I take the obligatory tablespoon full just to be nice. But I usually don’t even finish the little bit I take.
Maybe it’s because they’re covered in marshmallows and brown sugar. It’s all just a big ooey, gooey, fattening mess to me.
That’s why I was pleased when She Says editor Heidi Shaffer mentioned that she had a sweet potato recipe for Thanksgiving that was both easy and healthy. Not to mention not ooey or gooey. It’s become a staple for her family and it couldn’t be much more simple.
Heidi’s Easy and Healthy Sweet Potatoes
2 Large raw sweet potatoes – peeled and chunked into 1” squares
2 Granny Smith apples – peeled and chunked
1 can unsweetened pineapple chunks – drained
May also add ½ cup Craisins
Place all ingredients into greased 2 quart baking dish. Bake at 350 for 1 hour or until sweet potatoes are done
